We got a head of cabbage in our West Wind Farms CSA share this week so during meal planning decided I'd make some beef cabbage stew. I'm not a huge fan of cooking so if I'm going to do it, I like to make it count. So I decided to double the recipe. I bought 2.5 lbs or so of stew meat and got an extra head of cabbage just in case (which I ended up not needing and now need to find something else to do with). Found this recipe and it sounded fairly straightforward though if I had noticed the time it took to make I probably would not have done it. Instead of using pre-made beef broth and bouillon I just made 4 cups of broth with Better Than Bouillon and added a couple extra teaspoons of it. I actually ended up having to put a bit more broth in than even doubling the recipe called for. I didn't have any small cans of tomato sauce so I used a big can of crushed tomatoes. Anyways, it made a decent amount of soup and we'll get a few more meals out of it (pretty excited about lunch today). Stews on cold days are, of course, awesome.
Edit - My son called me at work to tell me he had two bowls last night and loved it and could "totally finish the rest of it off"today if the leftovers weren't important. :D
